When can I harvest cannabis?
The simple method
The easiest way to see if your plants are ready to be harvested, is to look at the pistils. (Pistils are the small, white hairs.)
If more than 50% of the pistils have turned brown, the plant is ready to be harvested. From 70% the THC converts to CBN. (This leads to a more relaxed high.)
The best CBN content is at 70-90% brown pistils. A maximum THC yield is to expect at approx. 65% brown pistils.

The pistils can become brown very quickly, i.e. an increase from 50% to 80% can occur in only 12 hours.
The more accurate method
For this method you will need a jeweler's loupe or a magnifying glass to see the trichomes (small mushroom like crystals). (Without a magnifying glass they look like sugar.)
When the balls/heads of the trichomes are transparent, the flower is still immature.
The Trichomes heads should be about 50% milky, then the flower is ready to be harvested.
If you wait until the trichomes get brown balls/heads, it is likely that some of the THC has turned into CBN and thus the high is more relaxing.
